The Super Mario All-Stars version of Super Mario Bros. 2 has prettier graphics, and the player controls during a level are a bit smoother.

Maybe it's just me, but I find the slot machine harder to stop on All-Star mode. Can seem to easily "quick stop" all three slots relatively smoothly on the original NES version.

I'm convinced that the timing is different.
The icons seem to keep sliding on All-Stars.
Perhaps it's just the animation that keeps moving...?

Fortunately, the areas where coins are collected appear to be exactly the same.

Double The Fun!

Definitely more prizes to be won on the All-Stars version.
In Super Mario All-Stars, matching three symbols is worth TWO extra lives.
Also, a Lucky Number Seven (7) has been added into the mix.
Get Cherries followed by a pair of Sevens, earn an Extra Life plus 3 coins!
Ka-Ching!

But wait, there's more...

Score the rarity of three Sevens and get rewarded with TEN Extra Lives!
